In the Kitchen: go-to Summer Salad!

Heeeello and happy Sunday, friend. ♡
If there is one thing I hope to do less of as the temperature rises it is...being in the kitchen over heat. Now, I like cooking and baking just okay but lately I want to be in the kitchen only if I'm making something that will be 20 minutes tops or if it's something I'm trying for the first time and it excites me.
In this sudden kitchen existentialism, I've been leaning so much towards sandwiches and leftovers. The monotony of these has already caught up to me and I know if there is something I can always have without getting bored in the summer, is a salad.
Salads can get a bad under-filling rep, but I promise they can be quite versatile meals that you can serve up all day and night. This couscous-veggie mix has been my go-to on the last 2 weeks and this is all it needs:
Couscous - 250ml.
Spinach - 4 leaves from a bunch.
Carrots - 2 medium sized.
Cucumber - small sized,
Onion - ¼ sliced into rings.
Tomato - 1 large sized.
Egg - 1 boiled.
Sauce or dressing.
Starting with the couscous as the base of salad, then adding all the vegetables and sometimes an egg. And finish off with topping sauce or salad dressing of choice.
OPTIONAL.
For a fuller meal, you may add some:
Ciabatta
Mashed potatoes.
Additional protein, like pork strips or other meats.
This dish is delicious and and quick! It will work at any time of day, with a variety of many other vegetables. Try it!
